Summary:
A few more areas of the 'Helpdesk Setup' section is still configurable with DEMO MODE enabled. The following "tabs" you can still add, edit, delete existing data:
* Forum Explorer
* Knowledgebase
* Web API
* Community Tools
So for instance you can add a new forum, new Support Center, and new KB topics. It looks for the most part you can delete stuff as well. The one exception being Community Tools. Looks like you can create new communities but you can't actually add/change any content (e.g. new contact situations). You also can't delete communities.

Verified fixed as of dev build 809.
Forum Explorer, Knowledgebase, Web API and Community Tools can no longer be modified.
